Ingredients

  • 2 tablespoons MCT oil, avocado oil, or lard
  • ¼ cup diced onions
  • ½ pound ground beef
  • 2 cups fresh spinach
  • ½ teaspoon fine sea salt
  • ¼ teaspoon ground black pepper
  • 2 large eggs
  • Grated Parmesan cheese, for garnish (omit if dairy-sensitive)

Instructions

  • Heat the oil in a large cast-iron skillet over medium-low heat.
  • Add the onions and cook for 10 to 20 minutes, until the onions are soft and light brown.
  • Increase the heat to medium and add the ground beef.
  • Brown the meat, crumbling it with a spoon, until cooked through, about 5 minutes.
  • Add the spinach, salt, and pepper and cook for another minute, until the spinach is wilted.
  • Crack the eggs into the center of the skillet and scramble them.
  • Serve warm, garnished with Parmesan cheese, if desired.

  • This dish is best served fresh, but any leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
