Ingredients

  • 1 cooked chicken carcass (meat removed) and no drippings
  • 1 inch worth of ginger
  • 1 small onion, quartered (skin on)
  • 1 cup chopped celery greens
  • 2 cloves garlic (I always use 3)
  • 2 tbsp apple cider vinegar
  • 120oz water – between 100 and 135oz works

Instructions

  • Combine all the ingredients in the pressure cooker
  • Pour in the water
  • Seal the cooker – make sure it is sealed correctly (been there)
  • Turn on and set to Manual / High Pressure / 60 minutes
  • Once time is up, cool and release the pressure (careful it’s HOT)
  • Let it cool for one hour
  • Strain in clean large bowl
  • Season the broth with salt as desired
  • Let the broth chill for several hours or overnight
  • Remove the solidified fat from the top of the broth and discard
  • Portion into glass jars and store for up to a week in the fridge, or freeze for up to 3 months

I use 1 cup (8oz) jars as most of the recipes call for 1 cup of broth.
