How to Make Mashed Cauliflower Low Carb That Is Both Flavorful & Healthy
This is a simple and easy recipe for mashed cauliflower that you can make in just 10 minutes. It is a low-carb alternative to mashed potatoes, but still has all the flavor.
This easy mashed cauliflower recipe is prepared with 5 ingredients: cauliflower, garlic cloves, buttermilk and butter. Will it taste like mashed potatoes? Quite close! But, it’s cauliflower, keep that in mind 🙂 I use it often in keto recipes.
Note: many call it fauxtato (mix of faux (fake) and potato, but I don’t like it – it’s real cauliflower that is mashed, creamy and delish 🙂

Mashed Cauliflower Low Carb Ingredients:

- 1 medium head cauliflower, cut up into florets
- 4 cloves crushed garlic
- 1/3 cup 1% buttermilk
- Salt and pepper to taste
- 1 tbsp salted butter, plus optional more for serving

Preparation:

- Steam or boil cauliflower and garlic until soft.
- Drain the cauliflower,
- Add buttermilk, butter, salt, pepper and purée with a blender – an immersion one is perfect, a hand one works, my GrandMa always used a fork… 🙂
You can make the purée smoother or coarser depending on how long you use the blender.
