I’m sure we are not the only ones who made delicious overnight oats in mason jars. They offer many benefits with their fibers and protein, many vitamins and minerals. One huge downside, they contain some 60g of carbohydrates.
Time to make something more in line with our ketogenic diet.
Healthy Overnight Oats Easy Keto Alternative
Instead of rolled or steel-cut oats, we will use Chia Seeds, which have much fewer carbs and have an awesome Omega-3 – Omega-6 ratio. This recipe is simple, easy to make and delicious.

Ingredients
- 1 Cup Chia Seeds
- 1 Cup Coconut Cream
- 1 Cup Coconut Water
- 1 Cup Raspberries
- 1 T Cocoa Powder
- 1 Cup Strawberries
- Freeze-dried Raspberries
- Cocoa Nibs
Instructions
- In a food processor or blender, puree Raspberries and Strawberries.
- Add coconut water, coconut cream
- Blend well.
- In a bowl, mix gently with chia seeds and the cocoa powder.
- Add the fruit mixture, mix well
- Pour in mason jars
- Refrigerate overnight until chia seeds have swelled and doubled in size.
- Add freeze-dried raspberries and the cocoa nibs
- Cover and refrigerate until use

This recipe can be used for desert or for daily work snacks (it’s what we do).
